Wash the squid well, remove the bone and the entrails, season the squid with salt and pepper and fill with the dolmas, seal with a toothpick.
Put all the ingredients for the sauce in a bowl and leave it in the fridge covered until we use it.
Put the squid in an oiled pan, cover and cook for 10 minutes at 200 degrees Celsius, uncover and continue cooking for another 10 minutes.
Serve by pouring the squid with the sauce.
Tip: For a milder taste in the acidity of the sauce, use lemon zest and juice!
