Dolmas with Quinoa and Grilled Vegetables

Method

In a large pan pour the olive oil together with the onion and garlic to polish for 1 minute and then add all the other ingredients except the cherry tomatoes, stir over high heat for another 3 minutes and add the cherry tomatoes, finally add the vegetable broth and continue cooking over medium heat for another 10 minutes.

Remove from the heat and add the chopped mint, stir and serve with the dolmas.

Tip: We can add a little cumin and a little ginger in the vegetables for a more special taste!

1 package Dolmas with Quinoa 200g Palirria
1 zucchini in cubes
1 eggplant in cubes
1 yellow pepper into cubes
1 red pepper into cubes
1 onion in thin slices
2 cloves of garlic, finely chopped
8 cherry tomatoes cut in half
4 tbsp. olive oil
100ml vegetable broth
Salt Pepper
