Fava with Grilled Vegetables


We prepare the fava by mashing all the ingredients together until we achieve a smooth texture.

In a large pan, pour the olive oil together with the onion and garlic to shine for a minute, then add all the other ingredients except the cherry tomatoes and vinegar and stir over high heat for another three minutes. Add the cherry tomatoes and the vinegar, let the broth evaporate, add the vegetable broth and continue cooking over medium heat for another ten minutes.

Remove from the heat, add the chopped mint and stir. Serve on top of the fava.

Tip: We can add a little cumin and a little ginger in the vegetables for a more special taste!

For fava beans:
1 package Fava 280g Palirria
Juice from a lemon
1 tbsp. paprika
1 small onion
For vegetables:
1 zucchini in cubes
1 eggplant in cubes
1 yellow pepper into cubes
1 red pepper into cubes
1 sprig of celery in small pieces
1 carrot in small cubes
1 chopped onion
2 cloves of garlic, finely chopped
10 cherry tomatoes cut in half
4 tbsp. olive oil
1 tbsp. vinegar
100ml vegetable broth
Salt & Pepper
For serving:
2 tbsp. chopped mint
