Giant Beans Cream with Cherry Tomatoes & Lemongrass

Method

Prepare the base from the giant beans, putting all the ingredients in a mixer. Mash them and after turning them into cream, leave them in the fridge for 15 minutes.

Using a hoop, divide the mixture from the giants into two plates and place the cherry tomatoes, the lemongrass fillets and a few rocket leaves on top.

Just before serving, sprinkle with olive oil and freshly ground pepper.

Tip: During periods of fasting, add a little grated feta!

1 package Giants Beans 280g Palirria
2 oil nuts
2 sprigs of parsley
2 sprigs of dill
Half dried onion in slices
Juice from a lemon
2 tbsp. olive oil
Salt & Pepper

For serving:
8 cherry tomatoes cut in half
Lemon fillets
Some wild rocket leaves
Olive oil
Freshly ground pepper
