Giant Beans with Spinach & Peanut


In a deep frying pan, pour the olive oil together with the onion and the leek to polish, for two minutes and add the spinach. Let the volume fall and combine with the rest of the ingredients, stirring gently, leave for another 7 minutes and remove from the heat. Add the lemon zest and dill and mix.

Divide the spinach on the slices of bread and place the giants on top. Sprinkle with peanuts, add fresh pepper and if you want add extra lemon juice.

Tip: For a more spicy version we can add a little chopped hot pepper to the spinach. Also, if you want, as soon as you remove the pan from the heat with the spinach, add a little grated feta cheese and stir until it melts with the heat, in this case watch out for the salt and serve.

400 gr. coarsely chopped spinach leaves
1 small chopped leek
2 chopped green onions
2 tbsp. chopped dill
2 tbsp. olive oil
Grate a lemon
Salt Pepper

For serving:
4 slices of rustic bread baked with a little olive oil
1 package Giant Beans 280g Palirria
1 tbsp. peanuts
