Greek Island Fava with Mushrooms and Cherry Tomatoes


Prepare the fava by putting all the ingredients together in a mixer, until they are homogenous and achieve a smooth texture.

Put the mushrooms in a pan that burns together with the garlic clove and the olive oil and stir until they turn brown. Quench with the lemon juice, add the cherry tomatoes together with the thyme and mix. Leave them for another three minutes and serve on top of the fava.

Tip: We can add a little green chopped pepper for more freshness!

1 package Greek Island Fava 280g Palirria
1 small onion
Juice from a lemon
2 tbsp. olive oil
½ κ.γ. cumin

For the mushrooms:
6 mushrooms cut into 4
1 small hot pepper
1 clove of garlic, finely chopped
1 tbsp. olive oil
6 cherry tomatoes cut in half
Juice of 1 lemon
2 sprigs of chopped thyme
Salt & Pepper
